I am not a professional cook - I am an HR professional, but I love soups and I eat them all year round! To help you to decide on your soup for today I have created a collection of soup dedicated sites (on your right) featuring soup recipes from around the world - check it out  and pick your favourite!

Warm Avocado Soup

Ingredients:

4 ripe avocados

2,5 tbsp lemon juice

~90g butter

6 shallots  or 1 big onion

garlic - 1 clove

1 tbsp plain flour

1l chicken or vegetable stock (fresh or from the cubes)

salt and pepper

sour cream - 1 tbsp per bowl

1 small lime - few thin slices per bowl


A delicious soup - very easy and fast

  • Peel avocados, remove the stones and collect the flesh in a bowl. Sprinkle everything with lemon juice and blend with a blender. Once blended (not necessarily perfectly) - put it aside for later usage.
  • Chop the shallots (or the onion) and garlic. Over a low heat melt the butter in a saucepan. Add the chopped shallots (or the onion) and garlic and cook for about 5 minutes, until softened. Once softened, stir in (do it well) flour and cook for about 1 more minute. Stir in the stock and bring to the boil (you might want to increase the heat just a little bit).Once boiling, reduce the heat and add puréed avocados, cover and simmer for about 15 minutes. At the end of the 15minutes the soup is ready to be served! 
  • Ladle the soup into the bowls, season to taste with salt and pepper, garnish with few thin slices of lime and a spoon of sour cream.
